Guatamala

Single Origin Organic Guatemala coffee from Joyabaj, Quiché. Grown at altitudes between 1,300 and 2,000 meters and honey-processed (depulped and dried with fruit mucilage still on the bean), this coffee boasts tasting notes of cherry, malt, anise, and cinnamon with a sweet, rounded cup.

Why honey?  
Washed coffee is clean and classic. Natural keeps the whole cherry on for big fruit. Honey is the middle path: pulp removed, sweet mucilage left on during drying. That extra fruit sugar shows up as rounder sweetness and a fuller cup—approachable, but more character than everyday washed.
